Shiraz is a variety originally from France that has been exploited and promoted into the New World of wine. Shiraz is well suited to the soils and climate of the Dealu Mare. The grapes are picked when they have reached their maximum maturity resulting in a production of a maximum 7 tones/hectar. Before fermentation the grapes are given 3 days cold soak on the skins at 10°C which gives this wine its fruity and spicy characteristics. Fermentation is carried out for 20 days at a maximum temperature of 28°C.
Serve 18° – 20° and is recommended with spicy dishes, steaks, sausages, grills and seasoned cheese.
