This Ripasso comes from Casa Girelli. It has an intense ruby-red colour with a complex bouquet. This will remind you of cherries, raspberries and redcurrants. Oak ageing adds a pleasant roasted and spicy aroma. The wine is full-bodied on the palate, supple and well-balanced with a long finish.
Serve at 15° – 17° with smoked ribs, grilled pork sausages, tangy sauces or pizza.
Ripasso is produced when fermented Valpolicella is added to a cask containing the skins and lees left over from recently fermented Amarone wines. This gives added colour, texture and flavour to the Valpolicella wine.
